Pumpkin Roll Cake

So I made my first roll cake and I have to tell you, it's easier than it looks...for some people:)

What you need:
3 eggs
1 cup sugar
2/3 cup canned pumpkin
1 tsp. lemon juice
3/4 cup flour
2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground nutmeg

Filling:
Nuts (optional)
6 ounces cream cheese
1 cup powdered sugar
1/4 cup butter softened
1 tsp. vanilla

1) Preheat oven to 375

2) Large mixing bowl: beat eggs for 5 minutes.
Gradually beat in sugar until lemon color.



 3) Add pumpkin and lemon juice

4) Mix all the dry ingredients and sift into wet
 5) Fold in and do not mix!
 6) Line a 15x10 pan with foil and then flour it lightly.
 Bake for about 15 minutes and let stand for 10 minutes.
 7) Get a towel and dust with flour or powdered sugar
 8) The hardest part.  Putting the cake on the towel.  Lift the cake up to get it onto the towel and lightly dust with flour.
 9) Roll the cake with the towel
 10) Cool completely in towel and unwrap.  spread filling onto it.
 Add the nuts
 Roll the cake the way you roll the cinnamon rolls.
 Cut off the edges.

 Chill until serving time and dust top with powdered sugar.

Not perfect but its delicious!
