The cake pops are back and they are better than ever! The first time I made these I made a terrible mistake. Instead of frosting, I added a pack of cream cheese so don't make that mistake or they don't taste the same.
What you need are:
1 can of any frosting
1 box of any cake mix
1 package chocolate chips ( I used milk chocolate)
any decorations (coconut, sprinkles, mini chocolate chips, ect.)
package of lollipop sticks, skewers, or straws
1. Make the cake according to directions.
2. Let it cool off and put it in a big bowl. Crumble it and add the frosting. Mix it in with your hands or a spatula.
3. Roll them into balls and if you are picky about the size you can use an ice cream scooper. Put them on parchment paper on a baking sheet.
4. Melt 1/2 cup of chocolate chips in the microwave and dip the end of the skewers in and poke them into the balls.
5. Put them in the freezer. Get out your double boiler and put the rest of the melted chocolate in the boiler and the rest of the bag in.
6. Get out the balls and dip them in the melted chocolate and use a spoon to spread and take off the extra chocolate. Put on the decorations on before the chocolate hardens. Put them back in the freezer for a couple of minutes.
Lily, these are so so good! I only ate ONE; I am so proud of myself. You see, I could have eaten the entire tray of them.
