White Chocolate Oatmeal Cookies

So my neighbor had surgery the other day and I wanted to make him some of his favorite cookies.  The recipe was really easy and they were delicious.  You can also freeze these and they still taste amazing.

What you need:
1 1/2 cups flour
1 1/2 cups oats
1/2 tsp baking soda
2 sticks unsalted butter, softened
1/4 cup sugar
1 cup brown sugar
1 tsp salt
1 tsp vanilla
2 eggs
8 ounces white chocolate chips

1) Preheat oven to 350 degrees.  Mix flour, oats, and baking soda into a large bowl and set aside.  Cream together butter and both sugars.  Add vanilla, salt, and eggs.  Mix until its all blended and scrape down the sides.
2) Add the flour mixture 1/2 cup at a time.  Fold in the chocolate chips and refrigerate for about a half hour.

*If your cookies go flat as soon as you take them out of the oven then add a 1/2 cup of flour or until the dough can hold it's shape.
 3) Scoop the dough with a small ice cream scooper so you have the same size cookie.

 These are also a perfect midnight snack!!
